Almond Apple Bars with Apricot Glaze

1 c Rolled oats
1/2 c Oat bran
1/2 c Unbleached flour
1/2 c Almonds, ground
1/2 c Raisins
1 md Apple
1/2 c All-fruit strawberry jam
2 Eggs
3 tb All-fruit apricot jam

In a medium bowl, stir together the oats, oat bran, flour, almonds and raisins. Use a coarse-holed grater to grate the apple directly into the bowl, skin, juice and all. Combine well.

In a small bowl, use a hand mixer to combine the strawberry jam and eggs until smooth. Scoop into the oat mixture and stir until well combined.

Tip the dough into a 9-inch glass pie dish and level it out with your hands. Microcook, uncovered, on full power (100%) until dry to the touch, about 5 1/2 to 6 minutes. Spread the apricot jam evenly over the the cooked dough while still hot. Let cool completely before cutting into bars and serving.

Makes 12 bars.
