2 c Cantaloupe; diced
2 tb Red bell pepper; minced
1 tb Jalapeno; seeded & minced
1 tb Cilantro; minced
1 tb Rice wine vinegar
Combine all ingredients in a nonreactive bowl. Chill for at least 1 hour.
Serve with pork, chicken or fish.
Makes about 2 cups, or 12 servings.
