Black Bean Cherry Relish
1 1/2 c Pitted sweet cherries, chopped
1 cn (16oz) black beans rinsed and drained
1 sm Yellow bell pepper, diced
1/4 c Chopped onion(s)
1/4 c Chopped Anaheim Or poblano chili pepper
2 tb Balsamic vinegar
1 Garlic clove(s), minced
Salt to taste
Combine all ingredients in a medium bowl. Refrigerate at least 2 hours before serving. Makes a summery side dish for grilled meat or poultry, especially duck.
