Cranberry Fig Relish
3/4 lb Cranberries (3 cups)
1 c Finely chopped dried figs
1 c Chopped onion
1/4 c Packed brown sugar
1 tb Grated orange rind
1/4 ts Pepper
1/2 c Water
1/2 c Red wine vinegar
1/4 c Maple syrup
In heavy saucepan, combine all ingredients. Bring to a boil. Reduce heat and simmer, uncovered, for about 50 minutes or until thickened, stirring frequently. Remove from heat; let cool.
