Date and Egg Breakfast

3 tb Corn oil
1 md (1/2 cup) onion, chopped
1 c Pitted dates
1/4 ts Pepper
4 Eggs
1/2 ts Salt


Heat oil in skillet & stir-fry onions until golden. Add dates & pepper & stir-fry over low heat for 3 mins. Make 4 depression in date/onion mixture & add 1 whole egg to each depression. Sprinkle w/salt & fry for 3 mins to cook eggs. Serve warm, w/1 egg & some dates to each person.
