250 g Flour
1 tb Baking powder
1/2 ts Salt
150 g Sugar .PP
1 Egg, beaten
75 g Butter, melted
110 ml Milk .PP
1 tb Grated lemon rind
1 1/2 c Kiwis, peeled and chopped
120 g Walnuts, chopped
Preheat oven to 200 degrees C. Sift together the first 4 ingredients. Stir in the egg, butter, and milk, just until moistened. Fold in the lemon rind, kiwis, and nuts. Fill paper-lined muffin tins full, and bake approximately 20 minutes.
