Grilled Pork with Nectarines and Watercress
1/2 c Orange juice
3 tb Fresh cilantro; or parsley, chopped
3 tb Olive oil
1 ts Orange zest; grated
1 cl Garlic; minced
1/2 ts Salt
1/4 ts Pepper
1 lb Pork chops; boneless, center-cut
2 Nectarines; pitted,in wedges
1 lb Watercress; coarsely chopped
Combine orange juice, cilantro, oil, zest, garlic, salt and pepper. Place chops in a non-reactive dish and drizzle with 3 tbs of the dressing. Cover, chill and marinade at least one hour.
Prepare grill and cook chops to medium done. Slice into strips and toss with nectarines, watercress and dressing. Serve.
