Papaya Cucumber Salsa
2 c Finely diced English cucumber, unpeeled
2 c Diced peeled papaya or mango
2 tb Chopped fresh dill
2 tb White wine vinegar or lime juice
In bowl, combine cucumber, papaya, dill and vinegar. Season with pepper to taste. Salsa can be prepared up to one day in advance; drain liquid off before serving.
